Beet, Cucumber and Radish Salad with Basil Pesto
salt and pepper
½of sunflower seeds
¼of olive oil
½ grated Parmesan
Trim and peel beets and cut into match sticks
Cut cucumber, and radishes into match sticks
Place basil, sunflower seeds, olive oil, Parmesan and garlic into the bowl of a food processor.
Process to a puree, scraping down the sides.
Toss beets, radishes and cucumber with basil pesto.
